225 g/8 oz thin smoked salmon slices, cut into ribbons

225 g/8 oz smoked eel, cut into 2–3 cm/1 in pieces

115 g/4 oz beansprouts, blanched with hot water for 1 minute only and drained

60 g/2 oz cos lettuce, finely shredded, or rocket

for the dressing

4 tbsp freshly grated coconut or ground kenari (see here) or ground almond

½–1 tsp sambal ulek (see here)

1 shallot, finely sliced

1 garlic clove, very finely sliced

1 tbsp chopped fresh chives

2–4 tbsp freshly squeezed lime or lemon juice

salt to taste
